Ghatya (Chick Peas sticks)

Ingredients:

  • 1 Cup Chick Peas flour (Besan)

  • 5 tbsp oil

  • 1/2 tsp caraway seeds (Ajwain)

  • Salt to taste

  • Chilli powder to taste

  • Water 

  • Oil for frying

NOTE: To make the Ghatya you will need a potato ricer or ghatya machine

Preparation:
Put the flour in a bowl add caraway seeds, salt ,chilli powder, 5 tbsp oil, knead to a a soft dough and leave for 10 mins.
In a frying pot add enough oil to deep fry the sticks about 2 inches. Mix the dough and divide into two parts, put one part into the rice and press directly into hot oil,fry till crisp turning constantly. Take out on paper towel to absorb extra oil and repeat with remaining dough.

TUNA PUFFs

Choux Pastry ingredients:

  • 1 cup boiling water

  • 1 cup flour

  • 1/4 lb margarine 

  • 1/4 tsp salt

  • 3 eggs

 

Method of preparation:
In boiling water add margarine, let melt add salt and flour at once. Cook till the mixture comes together like a ball. Remove from heat allow to cool. Put the flour mixture in a  bowl. Mix in eggs one by one till mixture is smooth n glossy.
Heat oven at 375 F.
Take up mixture by spoonful and drop on a greased cookie sheet bake till golden grown.Take out of over and allow to cool cut and fill with tuna filling.

 

Filling ingredients:

  • 1 tin tuna drained and empted in a bowl 

  • 1 tbsp finely onions

  • 1 tbsp finely celery

  • 1/4 tsp black pepper

  • 1/4 tsp mustard paste

  • mayonnaise 4 tbsp

Mix all together chill for 30 mins and fill the puffs.

ONION PANEER 65

Ingredients:

  • 250 grams paneer cut into cubes

  • 1 small onion sliced

  • Oil for frying

  • 3 tbsp corn flour

  • 2 tbsp rice flour if not available use regular flour

  • 1/2 tsp garlic ginger paste

  • Pinch of black pepper

  • Pinch of turmeric

  • Pinch of garam masala

  • 1/4 tsp thinly sliced ginger

  • 1 clove garlic chopped

  • 1 stem curry leaves

  • 2 tbsp oil

  • Salt to taste

  • 1/2 tsp chilli flakes

  • 3 tbsp ketchup

  • 1 tsp yogurt

Preparations:

​In a bowl mix both flour, add salt to taste turmeric, garam masala, black pepper, ginger garlic paste. Add water to make a smooth and dropping batter. Dip the paneer in batter and fry till crisp and golden brown. In the remaining batter and the sliced onions and fry till golden brown.
Keep aside fried paneer and onions.
In a pan heat 2 tbsp oil add sliced ginger and chopped garlic and curry leaves fry quickly for one minute add ketchup chilli flakes salt to taste, fry for another minute add yogurt mix well stirring constantly, add 1/4 cup water bring to boil to a thick gravy consistency add fried paneer and onions mix well garnish with green onions and coriander.
